  1. Combine all ingredients in a heavy

  3. Rest a deep-fry thermometer on the rim of the pot
  4. Over moderately low heat
  5. Bring the mixture to a bubbly 225 degrees
  6. Stirring occasionally
  7. Let simmer for 15 minutes
  8. Checking to make sure the temperature does not rise
  9. Remove from the heat and let stand until cool or overnight
  10. Strain the oil without pressing the solids
  11. Then
  12. Discard the solids
  13. Store the oil in an completely clean glass jar at cool room temperature
