  1. Preheat a larage saut pan on medium-high for 2-3 minutes
  2. Spray pan with a cooking spray such as pam
  3. Add onions and garlic
  4. Saut 1-2 minutes
  5. Stirring occasionally
  6. Add ground beef
  7. Cumin
  8. Chili powder
  9. Salt and pepper
  10. Cook 5-7 until meat is brown and no pink remains
  11. Stir frequently and break up meat as it cooks
  12. While meat is browning
  13. Cut tomato into quarters and remove core
  14. Dice into bite-size pieces and set aside
  15. Dice cheese into bite-size pieces
  16. Drain beef and return to pan
  17. Add cheese and heat until cheese is melted
  18. Stirring frequently
  19. And reducing heat if needed
  20. Remove from heat and let stand 2 minutes
  21. Remove tortillas from package and place on paper towel
  22. Place in microwave and heat on high for 30 seconds
  23. Assemble roll-ups as follows: place tortillas on flat surface and add 1 / 2 cup beef mixture to each tortilla
  24. Divide tomato and lettuce between each tortilla
  25. Fold one side up about 1 inch to form the bottom
  26. And roll tortilla to make a cylinder shape
  27. Serve
