very good and a nice change. i am not a big fan of cauliflower so i use a bag of fresh stir fry vegetables instead. the presentation is very colorful. i adapted this recipe from a weight watchers cookbok. 1 point per 1 cup serving.

a do-ahead appetizer. you can 'wow' them with this one. i found this at southern living and this is the recipe as written. i like to use about half of the amount of blue cheese called for and i just use a 'swipe' on the bread.. not 2 tablespoons full.
i got my copy of this recipe from wetm tv through chef fred. we were at a health expo and chef fred served this dish. my niece and i loved this recipe so much i made it the next morning for part of our big breakfast. this makes a great breakfast or bunch.
