  1. Preheat oven to 400 degrees
  2. Combine chicken
  3. Corn
  4. Cheese
  5. Chili pepper
  6. And spinach in a microwaveable bowl
  7. Heat for 30 seconds in micro
  8. Warm tortillas in micro for 15 seconds
  9. On a clean
  10. Flat surface
  11. Lay out tortillas side-by-side
  12. Put 1 / 3 of chicken mix in the center of each tortilla
  13. To assemble each roll
  14. Fold the left and right sides in so no filling escapes during cooking
  15. And roll up
  16. Place all 3 rolls seam side down on a baking pan that has been sprayed
  17. Bake 12 minutes
  18. Flipping 1 / 2 way through cooking
  19. While eggrolls are in the oven prepare dip
  20. Sauce:
  21. Combine sour cream
  22. Avocado
  23. And dry dip mix in a small bowl until smooth
  24. Season to taste with pepper
  25. Top dip sauce with tomatoes before serving
  26. When eggrolls are done
  27. Allow to cool for a few minutes
  28. Then cup diagonally
