  1. Melt the ghee in a large skillet or wok
  2. Over medium-high heat
  3. Add the onion and saute
  4. Stirring frequently for about 5-8 minutes until they are golden
  5. Stir in the garlic and saute another 2 minutes
  6. Add the chopped tomatoes and their juice and mix
  7. Stir in the turmeric
  8. Garam masala and chili powder and continue cooking for an additional 3 minutes
  9. Add the mushrooms
  10. Sugar
  11. And salt
  12. To taste
  13. And cook for about 8 minutes until they have given off their liquid and are soft and tender
  14. "turn off the heat and stir in the yogurt
  15. A little at a time
  16. Stirring very well so it doesnt curdle"
  17. Taste and adjust the seasoning if needed
  18. Sprinkle with cilantro and serve
