  1. The night before serving
  2. Bring skinned
  3. Defatted chicken
  4. Lentils and split peas to a boil in water
  5. Reduce heat to low
  6. Cover and simmer 2 hours
  7. Remove chicken
  8. Bone
  9. Dice
  10. And refrigerate
  11. The next day
  12. Remove and discard any congealed fat
  13. Add celery
  14. Carrots
  15. Onion
  16. Parsley
  17. Thyme
  18. Pepper
  19. Turmeric
  20. Sage and poultry seasoning
  21. Simmer 1 1 / 4 hours
  22. Just before serving
  23. Add diced chicken and heat thoroughly
