this is a favorite of my family and friends. one of my former roommates gave it the name "crack" lasagna because everyone who has had it is hooked on the stuff.

Steps

  1. Brown and crumble sausage in a skillet
  2. Wash and chop greens
  3. Remove sausage from pan and drain on paper towels
  4. Wipe out skillet
  5. Heat olive oil in skillet and saute garlic
  6. Add greens to skillet
  7. Cook uncovered till wilted down
  8. Add 1 / 3 cup water to skillet
  9. Cook on low heat covered till greens are tender
  10. Add the sausage back into the cooked greens
  11. Set aside 1 / 2 cup to 1 cup of the greens sausage mixture for the top
  12. Mix cottage cheese
  13. Ricotta
  14. Pesto and egg together
  15. Salt and pepper to taste
  16. Line the bottom of a lasagna pan with the lasagna noodles
  17. Put half of the sausage / greens mixture on top of noodles followed by ricotta mixture
  18. Layer with more lasagna noodles
  19. Top with sausage / greens mixture followed by remaining ricotta mixture
  20. Place another layer of noodles on top
  21. Cover with monzerella cheese
  22. Reserved sausage / greens mixture and pine nuts if desired
  23. Bake for 1 / 2 hour till melty and bubbly
