breakfast strata with spinach and mushroom


i adapted this recipe from cook's illustrated. it sounds healthier than the other breakfast stratas with sausage and bacon (you don't have to tell anyone the truth!). it is so delicious, i had several requests for the recipe at a brunch before christmas. enjoy!

  1. Preheat oven to 225 degrees
  2. Arrange bread slices in a single layer on 2 large baking sheets and bake until dry and crisp
  3. About 40 minutes
  4. Turning slices over halfway through drying time
  5. When cooled
  6. Butter slices on one side using 4 tablespoons of butter
  7. Set aside
  8. Heat 3 1 / 2 tablespoons butter in large nonstick skillet over medium heat
  9. Saut shallots and mushrooms until shallots become fragrant and translucent
  10. About 3 minutes
  11. Add spinach to skillet
  12. Season with salt and pepper to taste and cook
  13. Stirring occasionally
  14. Until spinach and shallots are combined
  15. About 3 minutes
  16. Transfer to medium bowl
  17. Set aside
  18. Add wine to skillet
  19. Increase heat to medium-high
  20. And simmer until reduced to 1 / 2 cup
  21. 3 to 4 minutes
  22. Set aside
  23. Butter a 9x13-inch baking dish with remaining 1 1 / 2 tablespoons butter
  24. Arrange half the buttered bread slices
  25. Buttered-side up
  26. In single layer in dish
  27. Spread half of spinach mixture
  28. Then lay half of the cheese evenly over bread slices
  29. Arrange remaining bread slices in single layer over cheese
  30. Spread remaining spinach mixture and the remaining cheese evenly over bread
  31. Whisk eggs in medium bowl until combined
  32. Whisk in reduced wine
  33. Half-and-half
  34. 2 teaspoon salt
  35. And pepper to taste
  36. Pour egg mixture evenly over bread layers
  37. Cover surface flush with plastic wrap
  38. Weigh down
  39. And refrigerate at least 1 hour or up to overnight
  40. Remove dish from refrigerator and let stand at room temperature 20 minutes
  41. Meanwhile
  42. Adjust oven rack to middle position and heat oven to 325 degrees
  43. Uncover strata and bake until both edges and center are puffed and edges have pulled away slightly from sides of dish
  44. 60 to 65 minutes
  45. Cool on wire rack 5 minutes
  46. Serve
  47. To weigh down the assembled strata
  48. Two 1-pound boxes of brown or powdered sugar
