Steps

  1. Preheat oven to 400f
  2. Generously butter baking dish
  3. Spread spinach over bottom
  4. Sprinkle lemon juice over spinach
  5. Pat chicken dry
  6. Place on top of spinach
  7. In a small bowl
  8. Mix together basil or parsley
  9. Garlic
  10. Mustard
  11. Oil
  12. Mayonnaise and soy sauce
  13. Spread mixture over chicken
  14. Sprinkle bread crumbs evenly over chicken and lightly with cayenne pepper
  15. Bake 20-25 minutes until juices run clear
  16. Makes 4 servings
