  1. Bring 3 quarts salted to water to a boil
  2. Add in the rice and boil it until the rice is cooked
  3. About 18 minutes
  4. Drain
  5. Heat the oil in a skillet over medium heat
  6. Add in the onion
  7. Half the green pepper
  8. And half the celery
  9. Stir / saute 5 minutes until onion is translucent
  10. Add in the tomato sauce
  11. Worcestershire sauce
  12. And hot sauce
  13. Continue to cook to blend the flavors for 5 minutes
  14. Stir in the shrimp and cook until just done
  15. Stirring frequently
  16. About 2 minutes
  17. To assemble: heat the tortillas until hot and pliable
  18. Layer cup rice
  19. A quarter of the shrimp mixture
  20. A quarter of the raw pepper and celery
  21. And a quarter of the scallions in a thick horizontal strip across the bottom third of the tortilla
  22. Making sure the ingredients dont quite touch the edges
  23. Fold in the two sides and roll the wrap away from you
  24. Complete the wraps with the remaining ingredients
  25. Cut in half on the bias and serve immediately
