  1. Cut the meat into thin strips
  2. Heat butter in dutch oven or large saucepan
  3. Fry onions slowly
  4. Until deep yellow but not quite brown
  5. Add meat
  6. Salt
  7. Pepper
  8. Marjoram
  9. Garlic
  10. Thyme
  11. Vinegar lemon peel and 1 / 2 cup water or beef stock
  12. Cover and simmer slowly 1 / 2 hour
  13. Adding more water as necessary
  14. Keeping the meat in liquid
  15. When meat is tender
  16. Dissolve flour in just enough cold water to make a smooth paste and stir into gravy
  17. Check seasoning and add more salt and pepper if needed
