  1. Preheat oven to 375f
  2. In a large bowl
  3. Beat egg yolks and sugar until lemon colored
  4. Add flour a little at a time
  5. Mixing well
  6. Add vanilla and lemon rind
  7. Mix well
  8. In a large bowl
  9. Beat egg whites until stiff but not dry
  10. Fold egg whites into cake mixture
  11. Pour cake batter into prepared pan
  12. Bake at 375f for about 40 minutes
  13. Cake should be a golden brown and spring back when lightly touched
  14. Remove cake from oven
  15. Turn cake onto a rack to cool
  16. ----pasticciera cream----
  17. In a 1 quart sauce pan
  18. Combine the sugar
  19. Egg yolks
  20. Flour
  21. Lemon rind
  22. And vanilla and mix together well
  23. In a second sauce pan
  24. Scald milk
  25. Pour scalded milk over the egg yolk mixture
  26. Beating constantly with a rotary beater
  27. Cook egg / milk mixture on low heat
  28. Stirring constantly with a wooden spoon
  29. Until mixture reaches the boiling point
  30. Cook 4 minutes longer
  31. Stirring constantly
  32. Remove from heat
  33. Add butter and mix well
  34. Pour cream into a bowl and let cool
  35. Stir it occasionally to prevent a skin from forming over the top

  37. Follow above recipe for pasticciera cream
  38. Omitting lemon rind
  39. Add grated chocolate to cooked pasticciera cream and cook 1 minute longer
  40. Stirring constantly
  41. Until chocolate is blended in well
  42. Cool as in above directions

  44. Cut sponge cake into half inch slices
  45. Sprinkle half the slices with rum
  46. And the other half with creme de cacao
  47. Spread the bottom of a 10 inch oven proof dish with a little of the pasticciera cream
  48. Place 2 layers of the rum soaked cake slices on top of the cream
  49. Pour remaining pasticcera cream over the cake slices
  50. Sprinkle the candied fruit over the cream layer
  51. Cover the cream / candied fruit layer with 2 layers of the creme de cacao soaked cake slices
  52. In a medium sized bowl
  53. Beat egg whites until stiff
  54. Add sugar to beaten whites
  55. And beat again
  56. Pile the beaten egg whites on top of the cake
