zuke soup


my neighbor presented me with a 2 foot zucchini and this recipe. i am glad that she did. it is so easy to do and i loved the end result. you can serve this cold as well but i prefer it hot.

  1. Saut the onion and zucchini in the margarine for approx 5 minutes
  2. Add broth and simmer for 15 minutes
  3. Remove from heat and cool slightly
  4. Process until very smooth
  5. Pour back into a saucepan
  6. Season with salt and pepper
  7. Add the dill
  8. Nutmeg and milk
  9. Heat and serve
