zucchini yellow squash stir fry


a lovely veggie side dish. wonderful summer squash blends nicely with onion in this quickie stir-fry.

  1. Rinse zucchini and squash
  2. Cut into thin slices
  3. Discarding stems and bottoms
  4. Slice onion into thin rings
  5. Spray a wok or large
  6. Covered frying pan with cooking spray
  7. Melt butter in pan over medium-high heat
  8. Add zucchini
  9. Squash and onion
  10. Stir-fry for several minutes
  11. Until tender-crisp
  12. Season with salt and pepper
  13. To taste
  14. Add 3 t water and cover
  15. Reduce heat and simmer for 6-8 minutes or until mixture meets your criteria for doneness
