zucchini cottage cheese casserole


a warm, satisfying way to use some of the piles of zucchini that are around at harvest time. i don't know where my husband got this recipe, but it's a good one.

  1. Saute the zucchini and onions in the olive oil
  2. Then set aside
  3. Mix together the cottage cheese
  4. Eggs
  5. Rice
  6. Salt and pepper
  7. Layer the zucchini / onion mixture and the cottage cheese mixture in a greased casserole dish
  8. Mix the bread crumbs and parmesan together
  9. Then sprinkle over the casserole
  10. Drizzle the melted butter over all
  11. Bake for 40 minutes at 350 degrees f
