  1. Slice or chop zucchini and cook in microwave or steam
  2. Drain well
  3. Partially mash with a masher after it is cooked
  4. Add onion soup mix and mix well
  5. Add slightly beaten eggs and mayo and mix
  6. Pour into a greased pie plate
  7. Quiche pan
  8. Or pan
  9. Slice tomatoes and arrange in a circular ring on top of kugel until covered
  10. Sprinkle with italian seasoning
  11. Hint: i always score the top of this before i bake it since i find it easier to cut through the tomatoes when they are uncooked
  12. Bake at 350f for 45 minutes
