  1. Place zucchini in a colander set in sink
  2. And toss with the 1 teaspoon coarse salt
  3. Let drain 10 minutes
  4. Press out as much liquid as possible
  5. Whisk egg in large bowl
  6. Mix in zucchini
  7. Scallions
  8. Flour and the pepper until combined
  9. Heat oil in a large skillet over medium heat
  10. Cook fritters in batches
  11. Drop mounds of batter into skillet
  12. Flatten slightly
  13. Cook
  14. Turning once
  15. Until browned
  16. 4 to 6 minutes
  17. Transfer to a paper-towel-lined plate
  18. Sprinkle with salt to taste
  19. Repeat with remaining batter
  20. Serve immediatly
  21. With sour cream
