  1. Preheat oven to 350f degrees
  2. Grease two 9x5" loaf pans
  3. In a large mixing bowl
  4. Combine first 8 ingredients
  5. Make a well in the center of the mixture
  6. In a small bowl
  7. Combine eggs
  8. Oil
  9. Applesauce
  10. And vanilla
  11. Add to flour mixture
  12. Stirring just until dry ingredients are moistened
  13. Stir in zucchini
  14. Pecans
  15. And pineapple
  16. Spoon batter into prepared loaf pans
  17. Bake for 55 minutes or until a wooden toothpick inserted in center comes out clean
  18. Cool in pans on wire racks for 10 minutes
  19. Remove from pans
  20. And cool completely on wire racks
