zucchini pepper relish


too much zucchini? try this wonderful relish and enjoy your zucchini year round. it is really good on hotdogs or hamburgers. the yield is a guess, as i always at least double this recipe.

  1. In a food processor
  2. Finely chop zucchini
  3. Using an on / off motion
  4. Put zucchini in a large bowl
  5. Finely chop onions in food processor
  6. Add to zucchini in the bowl
  7. Remove seeds from
  8. And finely chop peppers by hand
  9. Add to bowl
  10. Sprinkle everything with salt
  11. Stir to blend
  12. Let stand 1 hour
  13. Stirring occasionally
  14. Drain off liquid
  15. Rinse thoroughly under cold running water
  16. Drain
  17. Pressing out liquid
  18. In a large heavy saucepan
  19. Combine sugar
  20. Vinegar
  21. Dry mustard
  22. Celery seed
  23. Pepper
  24. And turmeric
  25. Bring to a boil
  26. Stirring
  27. Add the drained zucchini mixture
  28. Bring to a boil
  29. Stirring frequently
  30. Simmer
  31. Uncovered
  32. Stirring occasionally
  33. For 15 minutes
  34. Or until thickened and zucchini mixture is tender
  35. Combine water and cornstarch
  36. Add to zucchini mixture
  37. Cook
  38. Stirring
  39. For 5 minutes
  40. Or until clear and thickened
  41. Seal in sterilized bottles and process in a water bath for 5 minutes
  42. How i sterilize bottles: wash bottles well in hot soapy water
  43. Dry them
  44. Put a cookie sheet in the oven
  45. With the bottles on the cookie sheet
  46. Right side up
  47. Heat oven to 225f
  48. Leave bottles at this temperature for 10 minutes
  49. Turn off oven
  50. Leave bottles in there until you need them
