  1. Preheat oven to 350 degrees f
  2. Lightly coat a 9x5x3-inch loaf pan with cooking spray
  3. Set aside
  4. Combine 1 tablespoon of the sugar and 1 / 4 teaspoon of the cinnamon
  5. Set aside
  6. Combine flour
  7. Oats
  8. Baking powder
  9. Salt
  10. Baking soda
  11. And remaining cinnamon
  12. Set aside
  13. In a large mixing bowl beat eggs with electric mixer on medium speed for 2 minutes or until foamy
  14. Add remaining sugar
  15. The applesauce
  16. Butter
  17. And vanilla
  18. Gradually add the flour mixture
  19. Beating on low speed just until combined
  20. Stir in zucchini
  21. Nuts
  22. And raisins
  23. Spoon into prepared pan
  24. Sprinkle with sugar-cinnamon mixture
  25. Bake for 1 hour and 20 minutes or until a wooden pick inserted near the center comes out clean
  26. Cool in pan on a wire rack for 10 minutes
  27. Remove from pan
  28. Cool completely on rack
  29. Wrap and store several hours before slicing
  30. Makes 16 slices
