zucchini chocolate chunk muffins with pistachio streusel


i will have an abundance of zucchini this year, so i am looking for different ways to use them. i found this at cookingclub.com and can't wait to try it!! i am guessing on times because i have not made these yet.

  1. Heat oven to 400f
  2. Grease bottoms of 12 muffin cups
  3. In a small bowl
  4. Combine all the streusel ingredients except butter
  5. Cut butter in with a fork until crumbly
  6. In a large bowl
  7. Combine 2 cups flour
  8. Sugar
  9. Baking powder
  10. 1 teaspoons cinnamon and salt
  11. In a medium bowl
  12. Whisk together milk
  13. Oil
  14. Eggs and vanilla
  15. Stir into flour mixture along with zucchini
  16. Mixing just until all ingredients are moistened
  17. Fold in chocolate
  18. Spoon batter into muffin cups
  19. Sprinkle with streusel
  20. Bake for 20-25 minutes or until golden brown
  21. Cool on wire rack 10 minutes
  22. Remove from pan
  23. Cool completely
