zucchini chocolate chip muffins


easy to make, moist and delicious. everyone loves these muffins. we omit the nuts and use regular sized chocolate chips, because that's what we usually have on hand. i like to pulverize the zucchini in the food processor, which makes it barely detectable in the muffins, that way even my kids will eat these!

  1. Combine flour
  2. Sugar
  3. Baking soda
  4. Cinnamon
  5. And salt
  6. In a separate bowl
  7. Combine egg
  8. Oil
  9. Milk
  10. Lemon juice and vanilla
  11. Mix well
  12. Stir the wet ingredients into the dry until just moistened
  13. Fold in zucchini
  14. Chocolate chips
  15. And walnuts
  16. Fill greased or paper-lined muffins cups two-thirds full
  17. Bake at 350 degrees for 20-25 minutes or until the muffins test done
