zucchini carrot bars with lemon icing


the grated zucchini and carrots make these bars nice and moist and adds vitamins to dessert!

  1. In large mixing bowl
  2. Combine first 5 ingredients
  3. Mix well and set aside
  4. In another large bowl combine remaining ingredients
  5. Except icing
  6. Mix well
  7. Add carrot-zucchini mixture to flour mixture
  8. Stirring just until combined
  9. Spread in a lightly greased 13 x 9-inch baking dish
  10. Bake at 350 degrees f for 25 minutes or until bars test done
  11. Place on wire rack and cool completely
  12. Frost with icing
  13. Cover and store in refrigerator
  14. Icing: combine all ingredients
  15. Beat until smooth
