  1. Preheat oven to 325 degrees f and grease a muffin pan with pam
  2. Combine zucchini
  3. Applesauce
  4. Oats
  5. Flours
  6. Egg
  7. Sugar
  8. And lemon juice in a bowl
  9. Let this mixture sit for about 15 minutes
  10. In the meantime
  11. Mix together the baking soda
  12. Baking powder
  13. Salt
  14. And cinnamon
  15. Fold this into the first mixture
  16. Stir in blueberries and add a dash of vanilla
  17. Scoop the batter into muffin pan and sprinkle with cinnamon
  18. Bake for approximately 25 minutes
  19. You can also double the recipe and still make only twelve
  20. To make larger
