  1. Melt margarine in a large nonstick skillet over medium heat
  2. Add zucchini and onions and cook 10 minutes
  3. Stirring frequently until vegetables are tender crisp
  4. Remove from heat
  5. Preheat oven to 350
  6. Add seasonings to zucchini mixture
  7. In a large bowl
  8. Eggs
  9. Cheese
  10. And mustard
  11. Add zucchini mixture and stir until combined
  12. Pour into a casserole dish that has been sprayed with a nonstick cooking spray
  13. Bake 35 minutes
  14. Or until lightly browned
