  1. Heat the barbecue hotplate / pan to medium
  2. Put the corn
  3. Coriander
  4. Zucchini
  5. Ricotta
  6. Eggs and flour into a large bowl
  7. Stir to combine
  8. Then season well
  9. Spray the hotplate / pan with oil
  10. Add two tbsp of the mixture and cook for two minutes on each side or until just cooked
  11. Cook in batches
  12. Then stack then up and drizzle with sweet chilli sauce
