Steps

  1. Spray a nonstick skillet and heat over medium high
  2. Add onion and cook 3 minutes or until softened
  3. Add zucchini
  4. Salt
  5. And thyme and cook
  6. Stirring
  7. 2 minutes
  8. Remove from pan
  9. Wipe pan clean and place bak on heat
  10. Add a tortilla and top half with 1 / 4 of the cheese
  11. Sprinkle 1 / 4 of the tomatoes over cheese and top with 1 / 4 of the zucchini mixture
  12. Sprinkle with 1 t parmesan
  13. Fold tortilla over and press lightly with palm
  14. Cook 3 minutes or until cheese is melted and tortilla is lightly browned
  15. Turn over and cook another 2 minutes
  16. Repeat with remaining tortillas and serve
