zucchini red pepper and feta frittata

Desciption

this frittata from canadian living has a decidedly greek feel about it - it is flavoured with dill, feta and kalamata olives. i love it for supper with a serving of greek-style oven fries on the side but it would be a wonderful brunch dish also.

Steps

  1. In a large non-stick ovenproof skillet
  2. Heat the oil over medium heat
  3. Cook the onion
  4. Zucchini and garlic
  5. Stirring often
  6. For 5 to 8 minutes or until softened
  7. Meanwhile
  8. In a large bowl
  9. Whisk together the eggs
  10. Milk
  11. Salt and pepper
  12. Stir in the red pepper and dill
  13. Pour into the skillet
  14. Reduce the heat to medium-low
  15. Sprinkle with the feta and olives
  16. Cook for 10 minutes or until the bottom and side are firm yet the top is still slightly runny
  17. Broil for 3 to 5 minutes or until golden brown and set
  18. Cut into wedges
