  1. Cut the zucchini into narrow strips
  2. Add to the saute pan and fry quickly in the olive oil for only a few minutes on medium-high heat
  3. Reduce heat to medium and add the pine nuts
  4. Brown lightly for another 2 minutes
  5. Be careful not to burn the pine nuts as they can burn easily !
  6. Stir in the raisins
  7. Finally
  8. Add the garlic and cook about 30 seconds
  9. Remove the saute pan from the heat and stir in the mint
  10. Salt
  11. Pepper and lemon juice
