  1. Slice onions into thin rings and saute in olive oil until clear
  2. Slice zucchini into thin round slices
  3. Do the same with the tomatoes
  4. Into a pyrex dish layer as follows:
  5. One layer of zucchini
  6. Thin layer of sauted onions in olive oil
  7. Tomatoes
  8. Sprinkle with parmesan cheese
  9. Salt and black pepper
  10. Keep layering until you have parmesan cheese on top then bake in 350 oven for about 45 minutes or until brown around the sides and bubbly and the zucchini is clear
