  1. Preheat the oven to 375 degrees
  2. Saute the onion
  3. Zucchini and jalapeno until soft
  4. Season with salt and pepper
  5. Beat your eggs into a large measuring bowl
  6. Add enough milk or cream to measure 2 cups
  7. In a deep pie dish spread evenly out the zucchini mixture
  8. Top that with the cheese and pour the egg mixture over it all
  9. Bake in the oven for 40-45 minutes
  10. Or until the middle is no longer shaky
  11. Remove from the oven and let rest about 5 minutes before cutting into it
  12. Enjoy !
