zucchini ham basil and ricotta fritters

  1. Whisk together the flour
  2. Eggs
  3. Butter
  4. Milk
  5. Salt and pepper in a large bowl
  6. Fold through the ricotta
  7. Basil
  8. Ham and zucchini
  9. Heat 2 tablespoons of oil in a small
  10. Non-stick frypan over medium heat
  11. Add half of the mixture to the pan and cook for about 4 minutes each side
  12. Set aside
  13. Repeat with 2 tablespoons of oil and the rest of the mixture
  14. Cut into wedges to serve
