  1. In a large
  2. Heavy pot
  3. Melt butter over med-high heat
  4. Add sausage and saute
  5. Breaking up with the back of a wooden spoon
  6. Until no longer pink
  7. About 5 minutes
  8. Add garlic and onion
  9. Saute for 1 minute
  10. Sprinkle with flour and saute for 2 minutes
  11. Gradually whisk in stock and bring to a boil
  12. Add zucchini
  13. Decrease heat and simmer until tender
  14. About 15 minutes
  15. Gradually whisk in cream and bring to a simmer
  16. Add cheese
  17. 1 / 2 cup at a time
  18. Stirring with a wooden spoon after each addition until cheese is melted
  19. Do not let boil
  20. Add lemon juice and pepper to taste
  21. Taste and adjust seasoning with lemon juice and pepper
  22. If necessary
  23. Ladle into heated bowls and garnish with croutons
