  1. To microwave: place all ingredients in a covered microwavable bowl or covered casserole
  2. And cook on high 5 to 8 minutes until vegetables are softened
  3. Caution ! bowl will be extremely hot ! stir and serve
  4. Stovetop: combine all ingredients and cook over low heat for 20 to 30 minutes until combined and cooked through
  5. Stir occaisionally
  6. Grill: place ingredients in foil pouch
  7. And place on grill over low flame
  8. Or medium to low heat approx 20 minutes
  9. Bake: place all ingredients into a covered casserole dish
  10. Or cover a pyrex with foil tightly
  11. And bake at 350 degrees for about 30 minutes
  12. Serve over rice
  13. Or by itself as a side dish
  14. This dish creates a lot of "juice" so have a good loaf of bread sliced and ready for dipping !
