  1. Rinse the zucchini and pat dry
  2. Trim off ends and slice zucchini into 1 / 8 inch thick slices without peeling
  3. There will be about 6 cups
  4. Heat oil in a skillet over medium high to high heat
  5. Cook zucchini while shaking and stirring the skillet
  6. Turn the zucchini occasionally with a spatula
  7. Add salt and pepper to taste
  8. Cook about 5 to 7 minutes
  9. Drain in a sieve
  10. Add butter to the skillet until melted
  11. Return zucchini
  12. Sprinkle with garlic and herbs
  13. Check for salt
  14. Toss and serve
