  1. Preheat a barbecue grill or chargrill on medium-high
  2. Place the zucchini in a large bowl with 1 tbs of the oil
  3. Season with salt and pepper and gently toss to combine
  4. Cook zucchini on preheated barbecue grill or chargrill
  5. Turning occasionally
  6. For 8 minutes or until brown and tender
  7. Transfer to a bowl and set aside for 10 minutes to cool slightly
  8. Combine the red wine vinegar
  9. Garlic
  10. Oregano and remaining oil in a jug
  11. And pour over the zucchini
  12. Season with salt and pepper
  13. Cover with plastic wrap and place in the fridge for 1 hour to marinate
