  1. Heat oil in a large skillet over medium heat
  2. Add zucchini and cook
  3. Stirring 2 to 3 minutes
  4. Until tender and golden brown
  5. About 25 minutes
  6. Reduce heat to a medium-low
  7. Sprinkle with salt and pepper
  8. Stir to coat
  9. Sprinkle with cheese
  10. Cover and cook until the cheese is melted
  11. 1 to 2 minutes more
  12. Serve warm
  13. Makes 4 servings
