  1. Halve zucchini lengthwise
  2. Place in a single layer in a shallow dish
  3. Cover and cook on high for about 3 minutes
  4. Or until zucchini is just tender
  5. Cool
  6. Scoop out the flesh from the zucchini
  7. Leaving shells intact
  8. Return shells to dish
  9. Combine zucchini flesh
  10. Rice
  11. Shallot cheese
  12. Oregano
  13. Orange rind
  14. Chili and cream in a bowl
  15. Spoon rice mixture into zucchini shells
  16. Cook on high for 3 minutes or until hot
