  1. Melt the butter in a large saucepan and cook the onion and garlic gently for 3-5 minutes
  2. Until softened but not browned
  3. Add the tomatoes with their juice
  4. Bring to the boil and simmer for 10-15 minutes
  5. Until reduced
  6. Stir the zucchini into the sauce
  7. Cover tightly and cook for 10-15 minutes
  8. Until they are tender
  9. Stir in the basil and season to taste
  10. Serve hot or cold
