  1. Preheat oven to 350f grease a shallow baking dish
  2. Scoop out the flesh of the zucchini
  3. Chop the flesh and set aside
  4. Place the shells in the prepared baking dish
  5. Rinse and drain the can of chick peas
  6. Take half the chick peas and use a hand held blender to puree them
  7. Heat oil in a large skillet over medium heat
  8. Saute onions for 5 minutes
  9. Then add garlic and saute 2 minutes more
  10. Stir in chopped zucchini and mushrooms
  11. Saute 5 minutes
  12. Stir in coriander
  13. Cumin
  14. Chick peas
  15. Lemon juice
  16. Salt and pepper
  17. Spoon mixture into zucchini shells
  18. Bake in preheated oven for 30 to 40 minutes
  19. Or until zucchini are tender
  20. If desired
  21. Top with shredded cheese during the last 5 minutes of baking
