zucchini with bacon corn peppers


this is a very colorful addition to any meal. this is a family favorite and a great way to use your garden zucchini and corn. a great side dish to serve to guests, even if they are not fond of zucchini. hope that you will enjoy this as much as we do.

  1. In a wide frying pan
  2. Cook your bacon until crisp
  3. Drain bacon drippings
  4. But leave 3 tablespoons of bacon drippings in the frying pan
  5. Add zucchini
  6. Corn
  7. Bell pepper
  8. Onion
  9. And garlic to the fry pan with the reserved bacon drippings
  10. Cook over medium heat stiriring often
  11. Until most of the vegetable liquid has evaporated and the vegetables are crisp tender
  12. Add the cooked bacon and heat through
  13. Add salt and pepper to taste
  14. Sprinkle grated cheese on top
  15. Cooking time does include cooking the bacon
