  1. Heat oil in heavy large skillet over medium-high heat
  2. Trim and quarter zucchini lengthwise then cut into 2" pieces
  3. Add zucchini to skillet and saute until beginning to brown
  4. About 8-10 minutes
  5. Season with salt and pepper
  6. Mix in olives and parsley
  7. Transfer to a shallow serving bowl and sprinkle with almonds
  8. Can be served warm or at room temperature
