  1. Preheat oven to 325
  2. Butter and flour 2 8" loaf pans
  3. Whisk the first 6 ingredients in a bowl
  4. In another bowl whisk together sugar
  5. Oil
  6. Eggs
  7. Vanilla
  8. Zest
  9. Blend well
  10. Add dry ingredients to egg mixture
  11. Whisk in zucchini and walnuts
  12. Pour into pans
  13. Bake about 1 hour
  14. 15 minutes until toothpick inserted in center comes out clean
  15. Let cool for 10 minutes then turn out to a rack to cool completely
