  1. Cook zucchini & onion in boiling salted water for 5-10 minutes
  2. Drain well
  3. In large bowl combine soup and sour cream
  4. Stir in carrots
  5. Fold in zucchini mixture
  6. Toss stuffing mix with butter
  7. Spread 1 / 2 stuffing mixture in a 127 1 / 22" baking dish
  8. Spoon zucchini mixture on top
  9. Sprinkle with remaining stuffing mix
  10. Bake at 350 for 25-30 minutes or until heated through
