  1. Scoop out zucchini flesh leaving a firm shell and set aside
  2. Sprinkle shells lightly with salt
  3. Turn upside down and allow to drain about 20 minutes
  4. Set oven at 350 degrees
  5. Puree zucchini flesh
  6. Add onion and garlic
  7. Add salt and pepper to taste
  8. Mix well
  9. Dry shells and stuff with puree
  10. Drizzle with 1 tsp olive oil
  11. Place in oven for 15-20 minutes or until just turning brown
  12. In small well of food processor or blender
  13. Put cheese
  14. Mint leaves and 1 tsp olive oil
  15. Pulse
  16. Forming a shiny paste
  17. Salt and pepper to taste
  18. Spread on warm stuffing
  19. Sprinkle with cumin and walnuts and serve immediately
