zucchini squash and bacon saut


my grandmother used to make this as i was growing up. i never liked squash but have grown to love this dish. i have tweaked it over the years as my grandmother never seasons anything.

  1. Cut bacon into approximately 1-inch size pieces and fry until crisp
  2. Add chopped onion and saut for a few minutes to lightly brown
  3. Add sliced zucchini
  4. Minced garlic
  5. Salt
  6. Pepper and stir
  7. Cover and lower heat
  8. Simmer on low heat
  9. Stirring occasionally until squash gets soft
  10. Add quartered tomatoes and simmer for 5-10 minutes more
