zucchini spice loaf


i've been searching the web high and low for healthy baking ideas. here's one i found from thefoodcoach.com.au and adapted slightly.

  1. Preheat oven to 180 degrees celcius
  2. In one bowl combine the flour
  3. Baking powder
  4. Spices
  5. Salt
  6. Raisin and walnuts
  7. In another bowl mix the oil
  8. Orange juice
  9. Honey
  10. Egg and zucchini
  11. Combine the wet ingredients through the dry until well combined
  12. Bake in a lined or oiled loaf tin for 35 - 40 minutes
  13. Turn the loaf out onto a wire rack and allow to cool completely before slicing
