zucchini spice bundt cake


a moist, dense spicy cake--similar to carrot cake. frost when cool with cream cheese frosting, or serve warm unfrosted for a great breakfast bread.

  1. Preheat oven to 350 degrees
  2. In large glass batter bowl
  3. Break eggs and stir well with fork
  4. Add sugar
  5. Vanilla and oil to eggs and mix again with fork
  6. Measure and sift 1 cup flour
  7. Baking soda
  8. Salt
  9. Baking powder and spices into batter
  10. Stir lightly with fork until mixed
  11. Measure remaining flour into sifter and add to batter
  12. Add broken nut pieces and cinnamon chips
  13. If desired
  14. Mix
  15. Spray bundt cake pan with no stick spray and dust lightly with flour
  16. Remove excess flour
  17. Pour batter into bundt pan evenly
  18. Then bake for 60 minutes
  19. Let cool down to warm before removing from pan
  20. Frost if desired
  21. When cool with cream cheese frosting
  22. Sprinkle with broken walnut or pecan pieces for garnish if desired
