  1. Place the almonds in a dry skillet over medium-low heat
  2. Toast
  3. Stirring occasionally
  4. Until lightly browned and aromatic
  5. About 4 minutes
  6. Transfer to a small bowl
  7. Hold the skillet away from the stove and spray it with nonstick spray
  8. Return the skillet to the heat and add the shallots
  9. Cook
  10. Stirring often
  11. Until softened
  12. About 3 minutes
  13. Stir in the lemon zest
  14. Salt and pepper
  15. Cook until aromatic
  16. About 30 seconds
  17. Add the zucchini and cook
  18. Stirring constantly
  19. Just until wilted
  20. About 2 minutes
  21. Remove the pan from the heat
