  1. Preheat oven to 425 degrees
  2. Wash zucchini well
  3. Then slice lengthwise
  4. Scoop out the zucchini flesh from each half using a spoon
  5. Leaving the halves about a centimeter thick
  6. Save the scooped zucchini in a bow
  7. Place the hollowed zucchini pieces on a baking sheet
  8. Chop or mash the saved zucchini
  9. Then mix in the tomato sauce
  10. Bread crumbs
  11. Parmesan cheese
  12. And italian seasoning
  13. Refill the zucchini halves with the mixture
  14. Then top with mozzarella cheese and black olives
  15. Place the tray in the oven for approximately 20 minutes
  16. Or until the cheese is melted and slightly browned
  17. Since these are supposed to mimic pizza
  18. You could use other toppings
  19. The longer the zucchini is in the oven
  20. The softer it gets
  21. So if you want firmer zucchini
  22. Feel free to take them out of the oven sooner
